This is a mix salad of shiitake mushrooms, broccolini and tofu seasoned with sesame paste. One of the traditional Japanese dish that I like most! But I hear it is disappearing from home kitchen because it takes some time to prepare! And it can't be!
Once you taste its creaminess, you won't forget it!!
Cooking time: 20min + preparation for tofu and shiitake mushroom
Serving: 4
Ingredients:
5 dried shiitake mushrooms(椎茸), soak in a water for one night
1/2 bunch of broccolini (菜の花; any green vegetables will do)
1 momen type tofu (木綿豆腐 )
Seasoning for tofu:
3 tablespoons white sesame paste
1 tablespoon sugar
1/3 teaspoon salt
1 teaspoon soy sauce
Seasoning for shiitake mushroom:
150cc dashi
1 tablespoon sugar
1 teaspoon mirin
2 teaspoon soy sauce
Directions:
Drain tofu throughly and crushed it in a grinding bowl to make a nice smooth paste. Mix with the seasonings. Cut the soaked shiitake mushrooms into slices and cook it with the seasonings till all the liquid dissolves. Parboil broccolini and cut into adequate length. Mix shiitake mushrooms and broccolini with the tofu paste.
Tips:
You should soak shiitake mushrooms in water and drain tofu beforehand. Fully draining tofu determines the taste.
